Krispie Date Slice

Feast your eyes on yet another mouthwatering masterpiece from Jenny's kitchen!

  • 125 grams butter
  • 110 grams caster sugar
  • 150 grams dates
  • 1 teaspoon vanilla extract
  • ½ teaspoon table salt
  • 150 grams Krispie biscuits (or vanilla wine biscuits)
  • ⅓ cup desiccated coconut

 

  • Grease and line a loaf tin with baking paper (approx. 13cm x 23cm)
  • Finely chop the pitted dates and set them aside. The dates can be very sticky, I find a sharp paring knife the best way to chop the dates. Break or crush the biscuits into chunks and set them aside.
  • In a small to medium saucepan, melt the butter and sugar over low heat, stirring until all the sugar has dissolved.
  • Once the sugar has dissolved the butter will have a bit of a thicker texture. Add the chopped dates and stir slowly to bring to the boil. Boil for about 3 minutes.
  • Remove the date mixture from the heat, toss in the vanilla and salt, mixing through. Then add in the biscuit chunks and stir through until the biscuits are well covered with the date mixture.
  • Press the warm mixture into the loaf pan and flatten it out using the back of a spoon.
  • Sprinkle coconut on top of slice and then press down.
  • Put in fridge for approx. 3 hours then slice.

I store this slice in an air-tight container in the fridge and then bring out to room temperature before eating. If you can wait that long!
